Ingredients
  1. 1 head Cauliflower
  2. 3 cloves Garlic
  3. 5 tbsp Olive oil
  4. 1 Lemon
  5. Himalayan Salt
  6. 2 tbsp Low-Carb Nuts
  7. half Avocado
  8. 1 tbsp to garnish Green onion
  9. Black Pepper
Instructions
  1. Preheat oven to 425°F.
  2. Cut Cauliflower into florets and toss on a medium to large baking sheet along with 2 chopped cloves of garlic, salt, lemon drizzle and 3 tbsp of olive oil.
  3. Roast cauliflower for about 35-40 minutes tossing occasionally.
  4. In the meantime, prepare 2 tbsp of olive oil with 1 tbsp of lemon juice, salt/pepper, and 1 clove of garlic for the dressing.
  5. Once cauliflower is done roasting, place on a plate adding your choice of low-carb nuts, dressing, sliced avocado and green onion to garnish. Bon Apetite!
