Salad With Roasted Cauliflower Low Carb Keto.
- 1 head Cauliflower
- 3 cloves Garlic
- 5 tbsp Olive oil
- 1 Lemon
- Himalayan Salt
- 2 tbsp Low-Carb Nuts
- half Avocado
- 1 tbsp to garnish Green onion
- Black Pepper
- Preheat oven to 425°F.
- Cut Cauliflower into florets and toss on a medium to large baking sheet along with 2 chopped cloves of garlic, salt, lemon drizzle and 3 tbsp of olive oil.
- Roast cauliflower for about 35-40 minutes tossing occasionally.
- In the meantime, prepare 2 tbsp of olive oil with 1 tbsp of lemon juice, salt/pepper, and 1 clove of garlic for the dressing.
- Once cauliflower is done roasting, place on a plate adding your choice of low-carb nuts, dressing, sliced avocado and green onion to garnish. Bon Apetite!
